1c heavy cream
1/4 c lobster broth
Zest of one lemon
Pinch of Fennel pollen
6 oz rockfish filet
4 oz jumbo crab
2 fingerling potatoes (blanched)
1/2c leeks (blanched)
2 baby carrots (blanched)
Pan sear fish
Add liquid reduce by 1/3 and add blanched veg
