This creamy shrimp dip is the perfect start to a spring meal

RICHMOND, Va - It’s another great ‘Shaynefully Delicious’ Creation.  Culinary expert and Virginia This Morning resident Foodie Shayne Rogers served up a light and flavorful chilled shrimp dip. This dish is a perfect appetizer for a backyard cookout or springtime picnic. Serve this shrimp side dish as a spicy start to your spread.

RECIPE

8 oz. cream cheese, at room temperature

¼ c mayonnaise

¼ c sour cream

Zest and juice of a small lemon

1 lb medium shrimp, raw, shells off

1T Old Bay Seasoning

1T apple cider vinegar

1 bunch scallions, green part only, sliced

1 T sriracha sauce

1 t black pepper

Bread or Crackers to serve with dip

Poach the shrimp in a quart of water with the Old Bay and vinegar. Cool the shrimp and roughly chop it.  Mix the cream cheese, mayo and sour cream. It will be a little lumpy.  Stir in the scallion greens, sriracha and black pepper until it is well mixed.  Stir in the shrimp last.  Pour the mixture into a serving bowl and chill for at least an hour or overnight.  Serve with crackers or crostini. Enjoy!
