RICHMOND, Va. - Shayne Rogers joins us again today with another delicious and somewhat quirky summer recipe. We learned how to make “Lib Cheese Slaw,” a cousin to pimento cheese. This is a great recipe to enjoy either by yourself or with friends. Delicious!
Lib Wilhelm's Cheese Slaw
1 lb swiss cheese, shredded
1 bunch green onions, chopped
1/2 c pickled banana peppers, chopped
1/2 c pickled jalapeno peppers, chopped
Mayo, enough to bind. None of the recipes say how much and some say Wilhelm preferred Miracle Whip
Mix all ingredients in a large bowl with enough mayo to bind. Shayne uses Duke’s.
Wilhem served this in a hollowed-out cabbage with the outer leaves fanned to create a dramatic serving dish.
