BIG Herm's Ham & Swiss Fritatta
1/3 Cup finely chopped onion
1/3 Cup finely chopped green pepper
2 Tbs olive oil
4 large eggs
1 Cup chopped cooked ham
1 Cup grated Swiss cheese
Preparation: Preheat your broiler. Saute peppers and onions in 2 tsp olive oil and season with salt and pepper. Place in a large bowl with ham, half of the cheese and eggs. Season with salt and pepper, mix thoroughly. heat the 2 Tbs of olive oil in a 9in. saute pan with heat proof handle. Pour the mixture into the coated pan and cook on low heat until slightly set. Do not stir! Top with remaining cheese and fnish in your broiler until golden brown; about 2-3 minutes. remove from broiler and let it sit for a few minutes. Cut into wedges and serve.
