Date Night Bites

MAKES 1 SERVING

Affirmation: I am sweet.

These bites provide the perfect combination of sweet and salty. They also leave

your body perfectly balanced, as the sugar from the dates balances with the salt

and protein from the nut and cheese. This is a winning combo for any date night

or after-dinner treat.

2 dates

Small slice of goat cheese

4 walnut halves

Cut each date in half and remove the pit. Stuff each half with some goat

cheese and top with a walnut half. Enjoy!

Chia Seed Pudding

MAKES 4 SERVINGS

Affirmation: I am relaxed.

Chi, chi, chi, chia! Yes, these little chia seeds are the same seeds used on those

Chia Pets you’d see on TV infomercials. However, don’t let the little pets fool you.

Chia seeds, in natural form, are quite the plant-based powerhouse. Just 1 tablespoon

of chia seeds provides 6 grams of fiber, 3 grams of protein, and 3 grams of

omega-3 fatty acids.

You can add chia seeds to smoothies or even use them as sprinkles on cold

treats. Even better, try this delicious chocolate chia seed pudding. It’s a crossbreed

between a tapioca pudding and chocolate pudding, without all the added

fillers.

1 cup unsweetened almond milk or coconut milk

2 tablespoons raw cacao powder

1/4 cup chia seeds

1/4 cup maple syrup

  1. In a small bowl, combine the almond or coconut milk and cacao, stirring

until the cacao is blended in. Add the chia seeds and maple syrup and

mix well.

  1. Place the bowl in the refrigerator and chill for 2 to 3 hours, or until set.

Cookie Dough Bites

MAKES 12 BALLS

Affirmation: I am fun!

As a kid, I was obsessed with licking cookie dough batter from the mixing bowl.

However, my mom warned me that I could get salmonella poisoning from the raw

eggs, so it always made me a bit anxious to sneak batter. But come on, it’s really

the best part of the cookie-making process! So I came up with egg-free Cookie

Dough Bites that taste just like the batter. You can freeze them for a cool summer

treat or serve them as is to friends and family.

1/2 cup almond butter

1/3 cup raw or local honey or maple syrup

1 cup almond flour or cashew flour

1/4 cup chocolate chips

  1. Combine the almond butter and honey or maple syrup. Add the nut flour

and mix until a ball of dough forms. Add the chocolate chips.

  1. Roll into 12 bite-size balls and freeze for 30 minutes.
