RECIPE
1T olive oil
1 large white onion, chopped
1t salt
1T garlic, minced
1½ t dried oregano
1t chili powder
1t ground cumin
15 oz diced tomatoes with chilies
2c low-sodium chicken broth
2c cooked chicken, shredded
30 oz canned hominy, drained
¼ c cilantro, chopped
Tortilla strips
Heat the oil in a large pot over medium heat. Add onions and salt, stirring often til the onions are soft and starting to brown, 5-10 minutes. Stir in garlic and spices, cook for about 1 minute. Add tomatoes, broth, chicken and hominy. Bring to a simmer for about 10 minutes. Garnish with cilantro and tortilla strips.
