RICHMOND, Va (WTVR) - Good friend to the show Shayne Rogers put together her easy to make delicious appetizer and helped us launch our new ‘Virginia This Morning’ kitchen set.
2T vegetable oil
1T soy sauce, reduced sodium if you like
1T chopped garlic
1T grated ginger
1t crushed red pepper
1c chopped mushrooms
6 oz cooked chicken breast, chopped
1 can sliced water chestnuts, drained
½ c red peppers, diced
1t sesame oil
2 scallions, chopped
Lettuce leaves
Add oil to a pan over medium high heat, stir in mushrooms and let them cook down for 3-4 minutes. Stir together soy sauce, garlic, ginger and crushed red pepper in small bowl. Pour sauce over mushrooms and cook for 30 seconds, add chicken, water chestnuts and peppers. Cook, stirring just until warmed through. Remove from heat and stir in the sesame oil and scallions. Serve piping hot with cool crispy lettuce leaves.
