RICHMOND, Va (WTVR) - Our good friend and culinary expert Shayne Rogers is back with us to share her recipe for a ‘Shaynefully Delicious’ Apple Braised Pork Loin.
2T olive oil
1# pork loin, sliced into 4 portions
1T flour
2 large red onions
1t salt
½t pepper
1 ½ c cider
1c low sodium chicken broth
1t Dijon mustard
2 large apples sliced
1T fresh sage, minced
1T fresh parsley, chopped
Heat oil in a large nonstick skillet over medium heat. Coat both sides of each pork chop with flour. Cook until browned on both sides, about 3 minutes per side. Remove to a plate. Add onions, salt and pepper to pan and cook until onions have softened and starting to brown about 8-10 mins. Add cider, broth and mustard to the pan, stir to combine with onions. Return pork to the pan, increase heat and cook, uncovered, for about 15 minutes. Add apples and sage to the pan, flip pork chops. Cook until pork is cooked through and the apples have softened. Sprinkle with parsley and serve.
