RICHMOND, Va (WTVR) -A delicious tropical fruit, mangoes are becoming more and more popular. Chef Tammy Brawley from Green Kitchen shares a great recipe for a chilled mango soup. Perfect to enjoy on these last days of Summer.
Cold Mango Soup
Serves 4
4 C peeled, pitted, and chopped ripe mango
2 C mango nectar (a thick fruit juice, available in supermarkets)
1 C plain yogurt
¾ C heavy cream
2 T sugar
Dash of Cointreau or other orange flavored liqueur
6 mango slices for garnish
6 fresh mint sprigs for garnish
Puree the mango in a food processor fitted with a steel blade or in a blender. Add the remaining ingredients, except the garnishes, and process until smooth. Process in batches, if necessary.
Strain into a large bowl, cover, and refrigerate 1 hour. Serve in chilled bowls garnished with a mango slice and a sprig of mint.
