RICHMOND, Va (WTVR) - Food connoisseur Shayne Rogers shares a recipe for a yummy fresh corn and tomato salad.
3T Red Wine Vinegar
½ t salt
½ t fresh ground pepper
¼ c extra-virgin olive oil
4 c fresh corn kernels
2 c grape tomatoes, halved
1 bunch of scallions chopped
8 oz fresh mozzarella
1 ½ c fresh basil
Make the dressing by combining vinegar, salt and pepper. Wisk in the olive oil. Set aside for a minute.
Combine the rest of the ingredients, except the basil. Stir gently together and add the dressing. Let chill in the fridge until you are ready to serve. Just before serving, give the salad a quick stir and add the basil.
