Local Caterer Herman ‘Big Herm’ Baskerville rolled up on of his signature creations, his ‘Dynamite’ Egg Rolls filled with BBQ Chicken, Garlic with the kick of both Chipotle and Jalapeno Peppers.


2 chicken thighs roasted in “BH” barbeque rub and sliced thin

1/3 cup vegetable oil

2 tsp fresh garlic-minced

¼ red onion sliced

¼ apple sliced thin

3 wedges canned peaches diced

½ jalapeno sliced thin- seeded

2 tsp chipotle peppers pureed

1 tbsp honey

2 tsp ginger

1 egg – 1 tbsp water

10 egg roll wrappers


Roast the chicken in 400° oven for 45 minutes.

Sauté your garlic in vegetable oil about 1 minute- add your onions, apple, peaches, and jalapeno- sauté for two minutes- add your chipotle, honey and ginger and cool your mixture.

Mix 1 egg with tbsp water

Brush all 4 edges of your egg roll wrappers with egg wash

Stuffing from one corner put approximately 1/8 cup of cooled mix in the egg roll wrapper- pull corner over and turn in. Flip other sides in and roll. While tucking in repeat 9 more times.

BH Dynamite Egg roll Sauce

Sauce: mix 2 tbsps Dijon mustard, 2 tbsps orange marinade and 1 tbsp honey
