Holiday Pomegranate Salad
1/3 cup pomegranate juice
1/4 cup olive oil
2 tablespoons honey
2 teaspoons lemon juice
dash of salt
1/4 teaspoon ground pepper
1 star fruit (optional)
2 bags (5oz. each) mixed spring greens
2 medium pears, sliced
1/4 cups candied or regular pecans
1/2 cup pomegranate seeds
In a jar or covered container, mix dressing ingredients, and shake well. In a salad bowl, add both bags of salad greesn, pears and candied pecans. Add dressing when ready to serve and toss until coated. Place sliced star fruit on top and sprinkle with pomegranate seeds and serve.
Candied Pecans
1 egg white
1/2 cup brown sugar
1/4 teaspoon vanilla
4 cups pecans
Preheat oven to 275 degrees.
Line cookie sheet with foil. Spray foil with a nonstick cooking spray.
Beat egg white until stiff. Add sugar and vanilla. Stir until smooth. Mix in pecans and stir until coated. Pour nuts onto prepared cookie sheet. Bake until brown, about 10 to 15 minutes.
