Grilled Vegetable Roulade
Grilled Zucchini, Squash, Eggplant and Roasted Red Pepper, Spinach, Basil, Parmesan Regiano , Pine Nuts, Canola Oil, Salt and Pepper
Method of Prep
1.Slice zucchini, squash and eggplant in thin slices lengthwise, lightly oil, salt and pepper. Then grill. Then chill.
2.Roast red peppers then peel and chill.
3.In processor combine spinach, basil, parmesan, pine nuts, oil, salt and pepper.
4.Lay plastic wrap on flat surface, lay sheet of foil on top of plastic, arrange grilled vegetables then red peppers then pesto.
5.Roll it up.
6.Chill to set up.
