Lemon-cheese Ravioli with Exotic Mushrooms, Lardons and Citrus-Herb Butter
This dish is prepared at Selba with local/regional pasta, herbs, mushrooms and lardons
1. 4 oz Bombolini lemon-cheese ravioli
2. 3 oz sauteed exotic mushrooms (any combination of mushrooms may be used)
3. ½ tsp fresh chopped garlic
4. ½ cup white wine
5. 2 tsp extra virgin olive oil
6. 3 tsp pork jowl lardons (thick cut bacon may be used)
7. 2 tsp herb butter (recipe below)
8. 2 oz freshly grated Parmesan (garnish)
9. Salt and pepper to taste
Citrus-herb Butter
10. 1 lb softened butter
½ cup chopped fresh parsley
½ cup chopped fresh basil
Zest of 1 lemon
Salt and pepper to taste
Saute garlic in extra virgin olive oil until garlic is lightly browned, add remaining ingredients and saute for 2-3 minutes on medium heat. Garnish with freshly grated Parmesan and fresh herbs.
