Local entrepreneur David Ruble from Tater Dave’s passes along his signature creations of Rosemary potato bread and English muffins. Tater Dave's English Muffins
5 cups bread flour
1 cup pastry flour
2 T. salt
1 T. plus 1 t. sugar
2 cups milk
1 ¾ cups water
1 T. plus 1 t. yeast
Combine flours, salt, and sugar in mixing bowl with spoon. Make well and pour in milk and water. Add yeast to liquid. Stir with spoon until a smooth batter forms. Cover and let rise one to two hours (or refrigerate overnight).
Heat griddle to 250 degrees. Place muffin rings on griddle and spray with cooking oil. Use an ice cream scoop to fill the rings. Remember that the batter will expand as it cooks. Allow to cook until the tops look almost dry. Remove rings with tongs. Flip muffins with spatula and allow tops to cook until brown. Remove to wire rack to cool.
Muffins must cool completely for the crumb to set or else they will seem undercooked.
Split with fork or slice with a knife, toast and enjoy with your favorite jam, jelly, or butter!
