Grilled Turkey Burgers with Feta Cheese

1 1/3 to 1 1/2 lbs. lean turkey

1 cup frozen spinach, finely chopped

2 egg yolks

1/2 cup reduced fat feta cheese

2 teaspoons kosher salt

1/4 teaspoon cayenne pepper

2 teaspoons garlic powder

1 tablespoon onion powder

Mix your ingredients together and form into patties. Place between waxed paper and store in the refrigerator until ready to grill.

Make your Green Goddess Mayonnaise

In a blender, blend together:

1/2 cup Duke’s mayonnaise

1/2 cup sour cream

Juice of half of a lemon

Salt and pepper to taste

Handful of cilantro

Spread on your hamburger bun.

Cook your burgers on the grill or in a skillet with a little vegetable oil for about 6 or 7 minutes per side. Serve on a whole wheat bun slathered with the Green Goddess Dressing and fresh slices of tomato and lettuce. Enjoy!

Turkey Salisbury Steak

6 to 8 spinach feta turkey burgers

4 tablespoons salted butter

2 cups sliced button mushrooms

1 large onion, sliced

3 cloves garlic, minced

3 tablespoons unbleached all-purpose flour

2/3 cup dry white wine

1 1/3 cups low-sodium chicken broth

2 tablespoons chili sauce

1 tablespoon Worcestershire sauce

1/2 teaspoon dried sage

1 tablespoon chopped or dried parsley

1/2 teaspoon kosher salt or to taste

1/4 teaspoon ground black pepper

Sauté onions and mushrooms in butter until slightly browned over medium-high heat. Add garlic and cook one minute more.

In a large bowl whisk together flour, white wine, chicken broth, chili sauce, Worcestershire sauce,  dried sage, parsley, salt and pepper. I added it to the onions, mushrooms and garlic. Allow the sauce to thicken and add turkey burgers to heat and coat with the sauce. Serve with mashed potatoes and peas or favorite vegetable!
