RICHMOND, Va. (WTVR) – Sugar & spice and everything nice! There’s nothing like a great tasting batch of warm and fluffy pancakes made with tasty pumpkin and chocolate chips. Local Culinary Expert Debbie Boroughs shared her recipe with us.
Perfect Pumpkin Pancakes
Serves 4
Ingredients
1 ¼ cups all purpose flour
2 tablespoons sugar
2 teaspoons baking powder
½ teaspoon cinnamon
½ teaspoon ginger
½ teaspoon nutmeg
½ teaspoon kosher salt
1 pinch ground cloves
1 cup low-fat milk
½ cup canned pumpkin
2 tablespoons oil
1 egg
1 teaspoon vanilla
Directions:
Whisk flour, sugar, baking powder, spices and salt in a medium bowl.
In a separate medium bowl, combine milk, pumpkin, oil, egg and vanilla.
Combine with dry ingredients and stir gently.
Preheat nonstick skillet or griddle on medium-low for a few minutes.
Cook pancakes for about 2-3 minutes on each side.
Serve with warm maple syrup.
